Today we decided to get the grill out, it has been a while since we had kebabs! Honestly, there is nothing better on a hot summer night!
Here's the recipe:
Steak Kebabs
2lbs Filet Tips (or preferred cut, you can also use chicken)
Red, Yellow and Orange pepper
Red Onion
Italian Dressing
Granulated Garlic
Kosher Salt
Fresh Ground Pepper
Place 10 skewers in a Tupperware filled with water to soak so they don't burn on the grill.
Cube the steak & vegetables into 1 inch pieces and place in separate bowls. Generously salt the steak with kosher salt, ground black pepper, granulated garlic and half the bottle of Italian dressing, mix to coat. Cover and place in the refrigerator for 2 hours. If you use a tougher cut you can marinate for longer, which will tenderize the meat more.
Pour the other half of the Italian dressing over the vegetables, toss to coat, place in fridge.
Just before heating the grill skewer the steak and vegetables.
Preheat the grill to med/high direct heat for charcoal. (If you're using gas, just heat the grill to high heat) Place the skewers on the grill and flip every 5 minutes until they are the desired temperature. For medium steak, they take about 10-15 minutes total.

Grilled Asparagus
12 stalks Asparagus
Olive Oil
Salt & Pepper
Spray or brush the asparagus with Olive Oil, toss with salt and pepper. Cook over indirect heat on the grill sideways (so they don't fall through the grate) for about 5 minutes until charred, flipping once.
Grilled Potatoes
Russet Potatoes
Salt & Pepper
Butter
Pierce potatoes with a knife & parboil for 5-7 minutes. Drain potatoes and place each of them on a sheet of foil, cut the potato in half and then crossways, add a Tbs of butter and salt and pepper. Wrap tightly with foil and place on grill for 20 minutes turning to cook evenly.
Voila, a delicious summer meal!
